Add the melted butter and mix into a wet sand texture. Fill each cup with a spoonful of cracker mixture, then gently press the crumbs evenly to form a smooth base. Chill to set while prepare the filling ⭐️ Strawberry Cream Cheese 4g Gelatin sheet 150g (~ ⅔ cup) cream cheese, room temp 30g (2 tbsp) sugar 30g (2 tbsp) plain yogurt 5g (1 tsp) lemon juice 90g (6 tbsp) whipping cream 15g (1 tbsp) strawberry sauce Red food coloring, optional ➡️ Soak the gelatin sheets in water for about 10 minutes to bloom, then discard the excess water. Mash cream cheese to smooth then add sugar, yogurt, lemon juice and mix to combine. Microwave for 15 seconds to melt the bloomed gelatin before adding it to the cream cheese mixture. Whisk whipping cream to stiff, then gently fold to the cream cheese mixture Reserve about 50g of the cream cheese mixture for decoration later. Add the strawberry sauce and red food coloring to the remaining cream cheese mixture, and mix until well incorporated. Transfer the strawberry cream cheese mixture into a piping bag, then pipe it into the cups on top of the graham base. Freeze for 20 minutes to set the filling. If the white cream cheese mixture hardens, microwave it in 10-second intervals until smooth and whiskable.
