Basanti Pulao with Aloo Dum

Basanti Pulao is a traditional, mildly sweet rice preparation which is made specially for festive occasions. This dish is yellow coloured and prepared with rice, turmeric powder, ghee, cashew nuts, raisins and a mix of spices. Aloo Dum/Dum Aloo is a tasty potato curry in which baby potatoes are slow-cooked in a delicious gravy, which has a mix of spices, tomato puree, onions and thick curd. Aloo Dum is a great side dish with rice/roti. Approx. preparation and cooking time (Basanti Pulao): 15 mins Serves 3 persons Approx. preparation and cooking time (Aloo Dum): 20 mins Serves 3 persons List of ingredients (Basanti Pulao): 1. Ghee - 1 tablespoon 2. Cashew nuts - 10 3. Raisins - 10 4. Basmati rice - 1 glass 5. Bay leaves - 3 6. Cloves - 3 7. Green cardamom (elaichi) - 2 pods 8. Turmeric powder - 1 teaspoon 9. Ginger paste - 1 tablespoon 10. Salt - 1 teaspoon 11. Sugar - 2 tablespoons List of ingredients (Aloo Dum): 1. Peeled and boiled baby potatoes - 1 large bowl (approx. 25 potatoes) 2. Tomato puree - 2 cups (puree from 4 tomatoes) 3. Chopped onion - 1 cup 4. Chopped coriander leaves - 1 small cup 5. Thick curd - Half cup 6. Ginger-Green chilli paste - 2 tablespoons 7. Bay leaves - 3 8. Cloves - 5 9. Green cardamom (elaichi) - 3 10. Black peppercorns - 5 11. Turmeric powder - 1 teaspoon 12. Red chilli powder - Half teaspoon 13. Coriander powder - 1 teaspoon 14. Jeera powder - 1 teaspoon 15. Garam masala powder - 1 teaspoon 16. Hing (asafoetida) - 1 teaspoon 17. Salt - 1 and half teaspoons 18. Sugar - 2 tablespoons 19. Oil - 4 tablespoons Method of preparation (Basanti Pulao): 1. Take a large, thick bottomed broad vessel, add 1 tablespoon ghee and turn on the heat to low flame. 2. Add 10 cashew nuts, raisins and fry until the nuts turn golden brown and the raisins are inflated. Transfer them into a small bowl. 3. Next, add 3 bay leaves, cloves, 2 elaichi and fry for a few seconds. 4. Now, add 1 glass washed basmati rice, 1 teaspoon turmeric powder, 1 tablespoon ginger paste and mix all the ingredients. 5. Add 2 glasses water, 1 teaspoon salt (can vary as per taste and quantity), 2 tablespoons sugar, stir well and cover with a lid. Cook on high flame until the rice is well cooked. 6. Garnish with roasted nuts and raisins. 7. Enjoy tasty Basanti Pulao with Aloo Dum. Method of preparation (Aloo Dum): 1. Take 1 large bowl peeled and boiled baby potatoes, add half teaspoon each turmeric powder, salt and toss well to ensure the potatoes are nicely coated with salt and turmeric powder. 1. Take a large wok/pan, add 4 tablespoons oil and turn on the heat to medium flame. 2. Now, add the baby potatoes and shallow fry for a couple of minutes, so that they turn a little crispy. Then, transfer into a bowl and keep them aside for later. 3. Next, add 3 bay leaves, 5 cloves, black peppercorns, 3 elaichi, 1 teaspoon hing and fry all the spices. 4. Add 1 cup chopped onion and continue frying until it turns golden brown and aromatic. 5. Add 2 tablespoons ginger-green chilli paste and mix well. 6. Now, add 1 teaspoon each coriander powder, jeera powder, garam masala powder, half teaspoon each red chilli powder, turmeric powder and mix all the ingredients. 7. Next, add 2 cups tomato puree, half cup curd and stir well. 8. Add 1 teaspoon salt (can vary as per taste and quantity), 2 tablespoons sugar and continue cooking on medium flame. 9. Now, add the previously fried baby potatoes, mix well and garnish with coriander leaves. 10. Enjoy flavourful Aloo Dum with sweet Basanti Pulao.
