Ingredients: Long Brinjals Dry coconut Garlic pods Turmeric Red chilli powder Oil as required Salt as per your taste Preparation Process: Wash and wipe your Brinjals without water. Remove the stalk and make a slit in center like chilli bajji. Heat 2-3 Tsp of oil in a kadai drop the Brinjals one by one carefully as the oil splutter. Saute till oil coats the Brinjals and fry for a minute on low heat. Now close it lid and let it fry till soft. Meanwhile prepare the masala. Transfer garlic pods, dry coconut, turmeric, red chilli powder and salt as per your taste to a mixy jar and grind into a fine powder. Once Brinjals are cooked perfectly remove them on to a plate or cutting board and switch off the flame. Now add the grounded dry coconut powder to the kadai when it's still hot. Saute for 2 minutes and remove into a plate. Now just open the Brinjals and press slightly and stuff the masala one by one and place into the warm kadai. Do not switch on the flame. Let it rest till room temperature. Serve with white rice, plain dal( optional) and ghee which is the best combination. Can also be served as a side dish for rasam, chaaru and curd rice.
