Vegan Caesar Salad 1 head of organic Romaine Lettuce 1 cup croutons- see recipe below ½ cup vegan Parmesan cheese ½ cup Christine’s Vegan Caesar Dressing see recipe at christineavanti.com or on my youtube channel Fresh lemon juice Salt and Pepper to Taste Step 1 - Wash and pat dry Romaine lettuce. Slice lettuce into medium sized ribbons, place in a strainer and wash again. Next, place lettuce in a salad spinner to remove excess water and debris. Step 2 - Place lettuce into your favorite large salad bowl - toss with Christine’s Vegan Caesar Dressing, fresh croutons and vegan parmesan cheese - see my Caesar dressing and crouton recipes and videos at christineavanti.com or on my YouTube channel. Homemade Croutons These croutons are so easy to make and if you have any day-old bread in your breadbox this is always a great way to put it to use. Ingredients: 4 slices whole wheat sourdough bread, cut into 1-inch squares 1 tablespoon extra-virgin olive oil 1 tablespoon grated Vegan Parmesan cheese 1 garlic clove, minced ½ teaspoon dried oregano ½ teaspoon fine sea salt ½ teaspoon ground black pepper Step 1 - Preheat the oven to 325°F. Step 2 - Toss together the bread, oil, cheese, garlic, oregano, salt, and pepper in a bowl, coating evenly. Spread on a baking sheet in a single layer. Step 3 - Bake at 325° for 20-30 minutes. Turn with a spatula every 10 minutes, until browned and crisp. Cool on the baking sheet for 10 minutes. Store the cooled croutons in an airtight container for up to 2 weeks.
