Ingredients of Bandhakopir Kofta Curry: Cabbage - 1 Bowl Cumin Powder Turmeric Powder Coriander Powder Gram Flour Red Chilli Powder Rice Flour Plain Yogurt Green Chilli Cashew Nuts Paste Garam Masala Cumin Seeds Ginger Paste Dry Red Chilli Bay Leaves Chopped Tomato Garam Masala Powder Salt Sugar Refined Oil Ghee How to make Bandhakopir Kofta Curry: 1. At first steam the cabbage with little bit water. 2. Add 1/4 tsp salt. 3. When it starts boiling cover and boil for 5 mins on high flame. 4. Then turn off your oven and strain the water. 5. After straining put it in a bowl. 6. Add less than 1/4 tsp salt, sugar, 1/4 tsp cumin powder, 1/4 tsp chilli powder, 1/4 tsp coriander powder, 1/4 tsp turmeric powder, 3 chopped green chillies, 1/4 tsp ginger paste, 1/2 cup gram flour, 2 tbsp. rice flour. Mix well. 7. You can add gram flour and rice flour later if required. It will be a sticky mixture. 8. Make the koftas in small ball shape. 9. Then heat up oil and fry the koftas. 10. Fry the koftas till golden brown and take them out. 11. Now add 4 tbsp. oil in the kadai. 12. Add 1 bay leaf, 1 dry chilli, whole garam masala, 1/4 tsp cumin. Fry the masala for 15-20 secs. 13. Then add 1 small size chopped tomato and fry for 1 minute. 14. Add 25 gm cashew nuts paste, 1 tsp ginger paste and cook the masala for 1 minute. 15. After 1 minute add 1/2 tsp coriander powder, 1/2 tsp cumin powder, 1/2 tsp turmeric powder, 1/2 tsp chilli powder (as per taste), 1/4 tsp salt, 1 tsp sugar. Mix well then add little bit water and cook the masala. 16. Cook the masala for 2 mins on medium flame. 17. Then add 1/2 cup yogurt. Stir and cook for 1 minute on high flame. 18. Add sliced green chillies, 1/2 tsp garam masala powder. 19. Now add 1 cup water and cook on high flame. 20. When it starts boiling add the koftas. Cover and cook for 5 mins on low flame. 21. After 5 mins turn the flame to high. Add 1/4 tsp garam masala powder, 1 tsp ghee. 22. Cook till the gravy get a little thick and turn off your oven. Cover and let it rest for 5 mins. 23. Then serve hot with rice, chapati, poori or paratha.
