To make Lobia (Red Chawli) Sabji, you'll need the following ingredients: Ingredients: 1 cup Lobia (Red Chawli), soaked overnight and drained 2 tablespoons oil 1 teaspoon cumin seeds 1 medium-sized onion, finely chopped 2 tomatoes, finely chopped 1 teaspoon ginger-garlic paste 1/2 teaspoon turmeric powder 1 teaspoon red chili powder (adjust according to your preference) 1 teaspoon coriander powder 1/2 teaspoon garam masala Salt to taste Fresh coriander leaves, chopped (for garnishing) Now, let's move on to the cooking instructions: 1. Heat oil in a pressure cooker or a deep pan over medium heat. Add cumin seeds and let them splutter. 2. Add finely chopped onions to the pan and sauté until they turn golden brown. 3. Add ginger-garlic paste and sauté for a minute until the raw smell disappears. 4. Add chopped tomatoes to the pan and cook until they become soft and mushy. 5. Add turmeric powder, red chili powder, coriander powder, garam masala, and salt. Mix well and cook the spices for a minute. 6. Add the soaked and drained lobia (red chawli) to the pan. Mix well with the spice mixture. 7. Pour in enough water to cover the lobia completely. Stir well and adjust the salt if needed. 8. If using a pressure cooker, close the lid and cook for about 4-5 whistles or until the lobia becomes soft and tender. If using a pan, cover it with a lid and simmer until the lobia is cooked, stirring occasionally. This may take around 30-40 minutes. 9. Once the lobia is cooked, check the consistency of the gravy. If it is too thick, add a little water and simmer for a few more minutes. 10. Garnish with freshly chopped coriander leaves. Your Lobia (Red Chawli) Sabji is now ready to be served. It goes well with roti, rice, or any Indian bread of your choice. Enjoy your meal!
