Biodynamics at Waterkloof: Permaculture

Waterkloof's vegetable garden, which provides the restaurant with fresh produce, is designed with the principles of permaculture in mind, and companion planting is employed. The plant beds are rotated every planting season. Chickens are introduced after every harvest, adding valuable nitrogen back into the soil. No tilling is needed as the earthworms, chickens and organic compost maintain the soil structure at the optimum state for planting.
