What is most synonymous with summer other than the sweltering heat, yes Mangoes. This dish prepared with raw mangoes which contains all the essential flavours sweet, sour with a hint of hot spices is something out of this world. Chutney are usually had at the end of the meal right before the dessert and pairs very well with papads. It is believed that consuming raw mangoes also helps you from dehydrating during the summer. Select small, unripe mangoes for this dish as they are sour and is ideal for this. To give it that mild sweet taste, we have used Akh'er Gur (Sugarcane jaggery) here, but can also be done with Patali Gur (Date Palm jaggery). Jotting down the ingredients below. Ingredients: ------------------------------------------ 1. Raw Mangoes 500 gms of uncut raw mangoes will be equivalent to 250 gms when cut and this is discarding the pit/seed which accounts for most of the weight. 2. Cumin Seeds -- 2 tsp. 3. Coriander Seeds -- 1 tsp. 4. Fennel Seeds -- 1 tsp. 5. Mustard Oil -- 30 ml. 6. Panch Phoron -- 1 tsp. 7. Bay Leaf -- 1 pc. 8. Dry Red Chilli -- 1 pc. 9. Turmeric -- ½ tsp. 10. Chilli Powder (kashmiri) -- ½ tsp. 11. Salt -- 1 tsp. 12. Hot Water -- 250 ml. 13. Jaggery -- 100 gms.
