Ingredients: • Idli rice – 3 cups • Urad dal – 1/2 cup • Yeast – 1 tsp • Lukewarm water – 2 tbsp • Sugar – 1 tsp (for yeast) + 2 tbsp (for batter) • Salt – 3/4 tsp (adjust to taste) • Cooked rice – 1/2 cup Method: 1. Wash and soak idli rice and urad dal for 4-5 hours. 2. Grind the soaked rice and dal along with cooked rice into a smooth batter. 3. In a small bowl, mix yeast, lukewarm water, and 1 tsp sugar. Let it activate for 10 minutes. 4. Add the activated yeast and 2 tbsp sugar into the batter. Mix well. 5. Keep the batter covered and allow it to ferment until it doubles in size. 6. Add salt and mix gently. 7. Pour into small moulds or bowls and steam till soft and fluffy. Tips: • Batter consistency should be slightly thick. • Proper fermentation gives softness and perfect texture. • Do not over-steam.
