Pour honey into a clean 1/2 gallon glass jug. Bring 4 cups of water to a boil, then pour the boiling water over the honey in the jug and stir or swirl until the honey has dissolved. Add any additional ingredients, as listed for each recipe, then top off with the remaining 2 to 4 cups of cool water, leaving a few inches of space at the top. Cool to room temp and then add the yeast. Put a brewing airlock in the top of the jug and set in a moderately warm place to begin fermenting. Let sit until desired ABV is reached.
