Crispy seed crackers and a savory quiche with a seed crust – gluten-free, flourless, low-carb, and easy on your digestion 🤗🥧 Seed Cracker & Quiche Recipe with Seed Crust Seed Cracker Ingredients (Base): 120 g chia seeds 100 g flax seeds (whole or ground) 100 g pumpkin seeds 100 g sunflower seeds 50 g sesame seeds 1 tsp salt 1/2 tsp paprika or chili powder 350 ml water Quiche Filling Ingredients: 450 g cooked pumpkin or sweet potato (flesh) 70 g plant-based cream 2 eggs or vegan: 100 g silken tofu 50 g grated cheese of your choice 1/2 tsp salt & pepper Preparation: Seed Mix: Mix all seeds with water and spices and let soak for 15 minutes. Leave. Crackers: Spread a portion of the mixture thinly onto a baking sheet. Bake at 160°C (325°F) with convection for approximately 40–45 minutes, or until crisp. Quiche Crust: Spread the remaining mixture into a 20 cm (8-inch) springform pan, pressing it up the sides, and blind bake for 20 minutes. Filling: Puree the pumpkin flesh, cream, eggs/tofu, cheese, and spices.
