What does it take to build a bar that genuinely changes how someone thinks about a spirit they've written off? Baltimore's Dutch Courage Gin Bar has been quietly answering that question since 2019. Co-owners Brendan Dorr and Eric Fooy built Dutch Courage with the idea to let the adventure be-GIN for those who haven't found the right gin yet. Through a pandemic that hit ten weeks after they opened, a creative pivot that kept the lights on, and a philosophy that eventually extended to their second bar, Pink Flamingo, a James Beard nominated rum bar down the block, they've built something Baltimore didn't know it needed and neither did I.
