How to make Salted Caramel Popcorn Cupcakes - A Wooden Spoon Recipe with Elise and Amie

The cupcakes are incredibly fluffy (if you squish the dome it bounces back) but they actually weigh more than other cupcakes. They taste fantastic and the finish is super-smooth and pale in colour. What makes these so good (in addition to the ingredients and the order they're combined in) is that everything is stirred in individually by hand using a wooden spoon. Our "kid-friendly" buttercream icing can also be mixed by hand but using a mixer will be okay too. The recipe has a higher icing sugar content than the typical buttercream and most kids prefer it to the more buttery version (we do too). Makes 3 cupcakes (if you want MORE just multiply the recipe by 2, 3 or 4) WHAT YOU NEED Popcorn (make your own or buy some popped popcorn at the store) About 50 popcorn kernels 10 grams butter 1 tbsp vegetable oil Caramel 60 grams heavy cream 1/4 tsp vanilla 1/4 tsp salt 45 grams sugar 28 grams water Cupcakes 45 grams burned butter (see below) 45 grams sugar 45 grams brown sugar 1 large egg (room temperature) 5/8 tsp vanilla 5/8 cup flour 1/4 tsp salt 5/8 tsp baking powder 1/4 cup milk (room temperature) Icing 30 grams unsalted butter (room temperature) 1/4 tsp salt 1 1/4 cups icing sugar 1/2 tsp vanilla 1 1/4 tbsp milk (room temperature) Other Wooden spoon Cupcake pan WHAT YOU DO Burned butter Put butter in a small pan on medium heat, stirring until it turns brown Popcorn Heat butter and oil in a large pan over medium heat Add popcorn kernels and put lid on pan When you hear popping begin shake the pan and take off heat when popping stops Caramel Put cream on medium heat and add vanilla Whisk until it almost boils and take off heat Mix sugar and water in small pan over medium heat Bring to a boil until colour changes to deep amber (don't stir at all) Carefully whisk cream into sugar/water mixture (creates lots of steam) Stir in salt and let cool for an hour Cupcakes Combine burned butter, sugar and brown sugar and mix well with wooden spoon Add 1/2 the egg and mix well Add the remaining half egg and mix again Add the vanilla and mix well Combine flour, salt and baking powder Sift half of the flour mixture in and stir until texture is smooth Add all of the milk and stir well Sift in the remaing half of the flour mixture and stir until texture is smooth Fill cupcake papers 3/4 full Bake at 350 degrees Fahrenheit for 20 minutes Let cool completely Icing Stir butter until smooth and creamy Mix in the salt, milk and vanilla Sift in half of the icing sugar and mix well until smooth Sift in the remaing icing sugar and mix well Add addiitonal milk or sugar to achieve ideal piping consistency Stir in half of the caramel Fill a piping bag fitted with a large round tip (or just cut end off bag) Pipe on cupcakes in a dome shape Assembly Cover icing with popcorn Drizzle caramel over popcorn Enjoy your Salted Caramel Popcorn Cupcakes! ----------------------------------------------------- MINI-RECIPES with ELISE & AMIE Quick & easy "mini-recipes" for yummy baked treats in small quantities, demonstrated by Elise from Goodie Goodie and Amie from The French Pastry Works.
