When I started reading up about Tocabe and saw that it served Native American and Indigenous cuisine I was immediately intrigued. I have never had the chance to taste either and the photos of the mouth watering bison ribs had me drooling since we got off the plane. The concept of Tocabe is also interesting as it is not a traditional sit-down restaurant, but more comparable to a fast casual counter service place like Chipotle. At Tocabe, bison reigns supreme and you can take your pick of bison ribs, shredded bison and even ground bison. I partook of all three and lets just say I left Tocabe very happy and satisfied.
