This can be made anytime of the year but goes well in the summer months with a nice glass of Italian wine. This salad which originates from the Island of Capri is made from tomatoes, mozzarella cheese and basil leaves. Add a pinch of sea salt, extra virgin olive oil and balsamic vinegar if you wish. Leave the tomatoes out for a while, do not make straight from the fridge.
