Brazo de Mercedes! One of my favorite cakes. I hope it's your fave too. Yields: 1 Brazo De Mercedes log Baking Temp: 350df Baking Time: 20 mins Pan size: 12.5 inch x 17 inch Ingredients: Meringue: 10 egg whites 1 tsp cream of tartar 200g white sugar Custard: 1 large can of condensed milk 30g butter 115g (or ml) water 10 egg yolks 1 vanilla pod or 2 tsp vanilla extract His guys. I few notables and pointers I'd like to repeat. 1. Make sure your utensils you'll use for the meringue are clean. I don't want you guys to waste 10 good egg yolks. Be careful not to tear the yolks when separating the yolks and the whites. 2. When whipping the egg whites, always start on low before turning it up to medium and then high. Whipping time may vary. Could be 15 mins or longer. You'll know it is ready when you reach the stiff peak stage. 3. If the yolk tear while with the white, you can't use that for the meringue anymore. So have 3 containers ready. One for the yolk, one for the whites, and one where you will initially crack them in. This way, if you accidentally tear the yolk, you're only messing one egg and not the entire batch. 4.
