IT IS SPECIALLY MADE DURING THE WINTER SEASON TO KEEP US WARM ENOUGH TO SUSTAIN WEATHER. THE JAGGERY USED TO MAKE THESE LADOOS IS ALSO OF A SPECIAL TYPE KNOWN AS "CHIKKI KA GUD OR CHIKKI JAGGERY". THESE LADDOOS ARE GIVEN BY SAYING "TIL GUL GHYAA AANI GOD GOD BOLA". IT IS VERY EASY TO MAKE THESE DELIIOUS LADOOS WITH ONLY A FEW INGREDIENTS. LET ME SHOW YOU HOW. PREP TIME : 10 MINS COOK TIME : 20 MINS COURSE : SWEET DISH SERVINGS : 35-40 LADOOS NUTRITIONAL FACTS : PER LADOO ENERGY : 62 CAL PROTEIN : 1.5 GM CARBS : 7.5 GMS FIBER : 0.9 GM FAT : 3.5 GMS CHOLESTEROL : 0 MG SODIUM : 0.8 MG IRON : 1.4 MG PHOSPHORUS : 60 MG MAGNESIUM : 35 MG DOCTOR'S TIPS : 1. TIL KE LADOOS ARE RICH IN UNSATURATED FATS. THEY REDUCE THE RISK OF HEART DISEASE BY LOWERING CHOLESTEROL. 2. SESAME SEEDS ARE RICH IN DIETARY FIBRE. THERFORE THEY NORMALISE BOWEL MOVEMENTS. 3. TIL KE LADOOS ARE PACKED WITH IRON WHICH BOOSTS RED CELL PRODUCTION. THEY HELP WITH THE ANTI-AGEING PROCESS BY FULL FILLING OUR DAILY IRON REQUIREMENT. 4. THEY ARE RICH SOURCE OF CALCIUM. THE WATER CLICK TEST / SOFT BALL TEST : To check the soft ball stage of the jaggery syrup , take 1/4 cup water in a small glass bowl. Drop a bit of jaggery syrup solution in the water. Remove it and it should be sticky and form itself into a soft ball. on dropping the soft ball in water, it should make a click sound. This is when you add all the dry ingredients , mix and switch off the flame. 2. Dry roast dry ingredients (sesame seeds, grated dry coconut and peanuts) separately. 3. peel the skin of dry roasted peanuts and pulse twice in mixer grinder. 4. always do the water click test or the soft ball test before adding all oter ingredients into the jaggery syrup. 5. if you over heat the jaggery syrup , then the ladoos become to hard to chew, and if you under heat it, then it becomes sticky and chewy. therefore , the final texture of ladoos really depend on the perfect heating of the jaggery syrup. rest all is very simple.
