These Healthy Oatmeal Date Cookies are dense, moist, and chewy. They make a great on-the-go breakfast or after school snack option. Sugar-free oatmeal and date cookies 2 cups of pitted dates 250 g 1/4 cup maple syrup 60 ml 1/4 cup vegetable oil 60 ml 1 cup quick oat flakes 100 g 1 1/2 cup all-purpose flour 200 g 1/2 tsp ground ginger 1/2 tsp ground cinnamon 1/2 tsp of salt (optional) Preheat oven to 375˚F Soak the dates in boiling water for 5 minutes. Drain and transfer to a food processor. Add maple syrup, oil and blend. Add quick oat flakes, all-purpose flour, ground ginger, ground cinnamon, salt and process. Roll into 8 balls; place, 4 inches apart, on baking sheet lined with parchment paper. Flatten with fork. Bake for 12 to 15 minutes.
