In a bowl, combine: Grated paneer Almond flour or crushed soaked almonds Cream (malai) Chopped green chili, grated ginger Salt, coriander powder, garam masala 2. Mix well using your hands until a soft dough forms. If it feels sticky, refrigerate for 5–10 mins. 3. Shape into small round balls (koftas) and set aside. 🔹 Step 2: Cook the Koftas 1. Heat ghee in a cast iron pan. 2. Shallow fry the koftas on medium heat till golden brown from all sides. 3. Once cooked, remove and keep aside. Sauté for 3–4 minutes, then add chopped tomatoes. 5. Add a pinch of salt and Kashmiri red chili powder for color. 6. Cook until soft. Remove whole spices like bay leaf, cloves, cinnamon before blending. 7. Cool slightly and grind into a smooth paste. 🔹 Step 4: Final Gravy Preparation 1. In the same pan, heat 1 tsp ghee and add ½ tsp cumin seeds. 2. Add the ground paste and sauté for 2–3 minutes. 3. Add: ½ tsp coriander powder ½ tsp cumin powder ½ tsp kitchen king masala ½ tsp garam masala 1 tsp kasuri methi (crushed between palms) Salt to taste 4. Add a little water to adjust consistency and cook till gravy thickens. 5. Stir in 3 tsp cream (malai). Mix well until creamy and rich. 🔹 Step 5: Assemble the Kofta Curry 1. Add the fried koftas into the hot gravy. 2. Simmer for 2–3 minutes only (do not overcook or koftas may break). 3.
