THAI GLASS NOODLE SALAD 🥗 and this is vegan!! I had this salad 6 out of 10 days when I visited Thailand and it was soooo goood - it is spicy, sour, salty, sweet and SOOO BLOODY GOOOD ! And soooo easy to make!! Recipe: Soak glass noodles/potato starch noodles/mung bean noodles in hot water for 7-8 mins till soft. If you can’t find these, you can use rice vermicelli! In a bowl, put 2-3 red chillies, 2 tsp jaggery powder, 3 garlic cloves, minced, juice of 1 lemon. Pound it all together using a mortar pestle. Add a little salt and 1 tbsp light soy sauce. Cut 1 tomato, 1/2 onion, 1 celery stick, spring onion greens and lettuce. Mix the vegetables in the dressing! Add the noodles to this and mix it well! Serve immediately!!
