Gujrati Puran Poli We Gujaratis make Puran Poli very differently than Maharashtrians. Gujarati Puran Poli (also known as Vedhmi) is thick like Alu Paratha (stuffed with Tuwar daal) wheras Maharashtrians make it very thin. And we enjoy it with sabjee while Maharashtrian Puran Poli is enjoyed with Milk. Ingredients : 1 cup Pegeon Pea Seeds (Tuvar dal - soaked for 2-3 hours) Less than 1/2 cup Water 3/4 cup Jaggery (Gur) 2-3 Cardamom Powder Few Saffron Strands Some grated Nutmeg Powder 1 cup Wheat Flour (kneaded dough) Ghee Method : In a pressure cooker, add 1 cup soaked Tuvar Dal Add less than 1/2 cup Water Cook up to 2 whistles Transfer the dal in a pan Add 3/4 cup Jaggery (Gur) Cook until jaggery melts and keep stirring Add 2-3 Cardamom Powder Add few Saffron Strands Grate some Nutmeg into the mixture Keep stirring for 10 min on slow to medium heat until the mixture turns thicker Transfer the stuffing on a plate Knead a dough from Wheat Flour Roll out few balls from the dough prepared Add stuffing inside and cover its edges Dip this stuffed ball in the dry flour Roll it with the help of roller pin (Puran poli should be as thick as paratha) Place poli on it and dry roast from both the sides Apply Ghee on it and cook until golden-brown (Make more puran polis following same procedure) Enjoy your Delicious Gujrati Puran Poli .
