It is most popular among all the parathas & very easy to prepare too.. Ingredients: For dough preparation: 1) 1 bowl wheat flour / Atta 2) 1 bowl Maida 3) 1 bowl Corn flour 4) ½ spoon Baking powder 5) 2-3 spoon oil 6) Salt to taste 7) Water for dough For stuffing: 1) 4 Boiled Potato 2) 1 bowl fine chopped Onion 3) 5-6 garlic cloves 4) 2 spoon Red chilli powder 5) ½ spoon Turmeric powder 6) 1 spoon Coriander powder 7) Chopped coriander leaves 8) Oil 9) Salt to taste other ingredients: 1) Wheat flour / atta, to dust 2) Oil for roasting Method: Paratha dough preparation: 1) Take 1 bowl wheat flour in a large mixing bowl, 1 bowl Maida, 1 bowl Corn flour, 1/2 spoon Baking powder, 2-3 spoon oil and salt to taste. 2) Now add 1 Glass water and mix it properly and knead to the smooth and soft dough. 3) Rest for half hour making sure the flour turns moist. 4) Take boiled Potatoes and Peel the skin and mash potatoes. 5) Heat pan and add some oil. 6) Add chopped Cumin seed, Muster seed, Chopped Onion,1-2 spoon chopped Garlic. Fry it. 7) Add 1-2 spoon Red chilli powder,1/2 spoon Turmeric powder, 1 spoon Coriander Powder, Salt to taste and some Coriander leaves. 8) Fry up to 5 min.in low flame and transfer in a plate. Aloo paratha preparation: 1st Method- 1) Pinch a large sized ball dough, roll and flatten it. also, dust with some wheat flour. 2) Roll it into a thin circle as of chapati. flatten as thin as possible. 3) Spreads the chapati with Aloo Stuffing mixture. This helps to get flaky layers. 4) Now start creating pleats by folding with the help of fingers. 5) Begin to roll the pleated dough like a swiss roll. 6) Secure the end by pressing gently. 7) Take the rolled ball and dust with some wheat flour. and start rolling to slightly thick. do not roll too thin as you won’t be able to enjoy the layers. 2nd Method- 1) Make small balls out of it. 2) Take a wheat flour ball and roll it into small chapatti. 3) Place the potato ball inside. 4) Close it like dumpling 5) Press it little bit. 6) Again, dust it with dry wheat flour (this helps to roll easily) and roll it gently with rolling pin Fry Paratha: 1) On a hot Pan roast both sides of the paratha, till they turn golden shade. 2) Grease with ghee, oil or butter. 3) Serve aloo paratha hot with yoghurt, pickles, sauces or any chutneys.
