Whole Grain Einkorn Bread Soft, hearty, and simple to make at home. I started with a recipe from the Grand Teton’s Ancient Grains website and adapted it slightly. Servings: 1 loaf Ingredients • 1 ½ cups warm water • 2 - 4 tablespoons honey (Adjust to taste, I used 2 tablespoons) • 1 ½ teaspoons instant yeast • 1 teaspoon salt • 4 ⅔ cups organic whole grain einkorn flour (or grind 2 ⅓ cups einkorn berries) • 2 tablespoons melted butter Instructions 1. In a mixing bowl or stand mixer, combine the water, yeast, and honey. Let it sit until frothy (or while the flour mills, if grinding yourself). 2. Add the flour and salt, mixing until just combined. The dough will be sticky and may not pull away from the sides. 3. Cover and let rise in the bowl for 25–35 minutes. It should rise well, but doesn’t need to double. 4. With wet hands, lightly knead to punch down (about 30 seconds). 5. Place into a buttered loaf pan. Wet your fingers to smooth the top—no need to add flour or shape into a loaf. 6. Preheat the oven to 375°F (190°C). Let the dough rise in the pan for another 25–30 minutes. 7. Bake for 33–38 minutes, until golden brown. 8. Brush the top with melted butter. Cool in the pan for 20 minutes, then remove and let cool for about an hour before slicing.
