Ingredients 1 gallon water (3,785 g) 2.5 lbs beef (about 1,134 g) 12.3 g Cure #1 / Prague Powder #1 (6.25% sodium nitrite) 95 g kosher salt 200 g brown sugar ¼ cup pickling spice, lightly toasted Instructions 1. Lightly toast the pickling spice in a dry skillet for 1–2 minutes, just until fragrant. 2. Heat about 2 cups of the water and stir in the kosher salt and brown sugar until completely dissolved. Add the toasted pickling spice. 3. Add the remaining cold water and allow the brine to cool completely. 4. Once the brine is cold, stir in the Cure #1 until completely dissolved. Do not add curing salt to hot or boiling brine. 5. Place the beef into a non-reactive container or food-safe bag and completely submerge it in the brine. 6. Refrigerate throughout the curing process, turning the meat occasionally to ensure even exposure to the brine. 7. Once cured, remove the beef from the brine and rinse well under cold water. Pat completely dry before adding your pastrami seasoning and smoking.
