Apologies for the delay as I have been struggling with technical issues on my pc for the past forever basically and the problem has flared up even more recently, regrettably. Regardless, today we have some insanely easy brownies that are chewy, fudgy, and have the distinct crackly shiny crust on the top thanks to dissolved sugar, at least according to one devoted and beloved Italian American youtuber. The brownies also get an additional boost of flavor complexity from the browned butter, espresso powder, and dutched cocoa powder which all serve to add nutty, earthy tones that complement the chocolate flavor in the brownies. Once again, I am out of my element in describing the nuances of what make food taste good but I am nonetheless making an attempt. In any case, I hope that you try these out at home since they are insanely good considering how much difference a few simple extra steps and a handful of swapped ingredients compared to a basic brownie recipe can make. INGREDIENTS (9-16 brownies in an 8x8 tray) (double the amounts for a 9x13): 170g butter (6 oz/ 12tbsp) 250g sugar 62g flour (1/2 cup) 57g cocoa powder (1/2 cup plus 3 tbsp just weigh it honestly) handful of chopped chocolate/ chocolate chips about a tsp of molasses (eyeballed) 2 tsp vanilla extract (also eyeballed)(also maybe just a tbsp if doubling recipe) 1/2 tsp table salt 1/2 tsp instant espresso powder (optional but highly recommended) 3 large eggs
