For extra tenderness, marinate chicken in 1 T. of yogurt for 30 min. before cooking. Cut vegetables into 1" cubes. Slice onions. In a pot on medium heat add 1-2 T of olive oil, add vegetables and sweat them for a couple of minutes. Add the chicken, mix well, there's no need to brown anything. Add water until it comes to the level of the meat & vegetables. Simmer 15 minutes or until a fork easily pierces the carrots and potatoes. Add more water if needed. Stir in curry blocks, when dissolved, simmer an additional 5 minutes or until the gravy is thickened. Serve with with rice. Serves 6.
