Place these on a cling surface, place for 1 hour, take out and dip in corn flour mixture, then in crushed corn flake mixture, deep fry on medium heat for 5-8 mins till light golden, serve immediately. Chicken Tikka Burritos : Ingredients Chicken breast boneless 2 Yogurt ½ cup Crushed garlic 1 tsp Crushed ginger 1 tsp Lemon juice 2 tbsp Coriander 1 tsp Turmeric ¼ tsp Cumin ½ tsp Paprika 1 tsp Chili powder ½ tsp Salt ½ tsp Black pepper ½ tsp Oil 2 tbsp Ingredients to serve Tortillas medium size 4 Lettuce sliced into strips 1 cup Boiled rice 1 cup Yogurt 4 tbsp Mango chutney 4 tbsp Thinly sliced jalapeno pepper 1 Red bell pepper ½ Method Marinate chicken with yogurt, ginger garlic, lemon juice, coriander, turmeric, cumin, paprika, chili powder, salt and pepper, mix together, and leave it for an hour. Put chicken pieces into 4 long metal skewers, brush the skewers with oil, grill for 15 mins turning once or twice, put the tortillas onto 4 plates, add the sliced lettuce, cooked rice, remove the chicken from the skewers, put on the tortilla, top with yogurt and mango chatni, sprinkle on the jalapeno slices, chopped red pepper, roll the chapatties up, wrap it up in foil, serve immediately. Kaleji Pepper Fry: Ingredients Mutton liver ½ kg Milk ¾ cup Cinnamon 1 inch stick Green cardamom 3 Cloves 3 Fennel seeds 1 tsp Whole black pepper 1 tsp Curry leaves 25 Onion 2 Crushed garlic 1 tbsp Ginger finely chopped 1 tbsp Green chilies 4 finely chopped Turmeric ½ tsp Black pepper 1 ½ tsp All spice ½ tsp Salt 1 tsp Oil ¼ cup Coriander chopped 2 tbsp Dried fenugreek ½ tsp Ingredients for grounded for masala: Oil 2 tbsp Curry leaves 6 Onion sliced round 1 cup Desiccated coconut 3 tbsp Black pepper 1 tsp Coriander powder 1 tsp All spice powder ½ tsp Method: Wash liver well, soak liver in milk, again wash liver, and discard the milk. Method for ground masala In a pan heat oil, fry sliced onion, coconut and curry leaves, sauté for 2 mins, add black pepper, coriander and allspice powder, mix well, turn off the heat, cool and grind it into a smooth paste, keep aside. In a wok add ¼ cup oil, add whole spices, add curry leaves with ginger garlic paste, sliced onion, green chilies, cook till onions are soft. Once the mixture is cooked, add the grounded masala, fry for few mins, add your liver pieces, mix well. Lastly add allspice, kasuri methi, garnished with chopped coriander, serve with lemon wedges
