EXTREME food budget challenge | €1 a day for a month in EUROPE | mostly PLANT BASED

My monthly budget last year was 150€ for two people, and in December I spent 240€. To even things out, in January I set a budget of 60€. I will show what I bought and some meal examples. I did most of my shopping at Kaufland, some at Lidl and Billa. Most of the items were on sale. Most of the meals are plant based, we do eat fish from time to time, and the occasional meat or cheese, the eggs I get from my moms boyfriend who has free range chickens.
