Why I wouldn't buy an APS-C camera again (bird photography)

APS-C cameras like the Canon 7D, Nikon D500, and Sony A77 were very popular among wildlife photographers. But today, full-frame cameras like the Canon R5, R6, or Sony A1 or Z9 dominate the market. Why? What are the advantages and disadvantages of APS-C compared to full-frame? What about high ISO and shy bird species?
