🍯 Meethi Seviyan (Sweet Vermicelli) – Step by Step Recipe 🛒 Ingredients • 1 cup vermicelli (seviyan) • 2 tbsp ghee • 8–10 cashews • 8–10 almonds • 1½ cups water • ¼–⅓ cup sugar (as per taste) 👩🍳 Method 1️⃣ Roast the Dry Fruits Heat a pan on medium flame. Add ghee and let it melt. Add cashews and almonds and fry until they turn light golden. This gives a rich flavor. 2️⃣ Roast the Seviyan Now add vermicelli (seviyan) to the same pan. Roast on low to medium heat, stirring continuously until it turns light golden and aromatic. Don’t over-brown. 3️⃣ Add Water Pour in 1½ cups water carefully. Stir and let it cook on medium flame. 4️⃣ Cook Until 70% Done Let the seviyan absorb most of the water and become soft — about 70% cooked. It should be soft but not mushy. 5️⃣ Add Sugar Now add sugar and mix well. Sugar will release moisture, so the seviyan will loosen again — this is normal. 6️⃣ Final Cooking Cook for another 2–3 minutes until the sugar melts completely and the seviyan becomes soft, separate, and glossy.
