For the Chicken Stew Butter – 2 tbsp Cinnamon stick – 1 Bay leaves – 2 Ginger – 1 tbsp (finely chopped) Garlic – 1 tbsp (finely chopped) Carrot – 1 cup (cut into long batons) Onion – 1 large (big dice) Green peas – ½ cup Chicken – 750 g (bone-in preferred) Salt – to taste Black pepper – 1 tsp (freshly crushed) Coriander (dhonapata) paste – 1 tsp Potato – 1 large (cut into cubes) Water – 3 cups (adjust as needed) Coconut milk – 2 tbsp Fresh coriander leaves – 2 tbsp (chopped) For the Toasted Bread Bread slices – 2 (cut into halves) Butter – as required Black pepper powder – to sprinkle Method (Step-by-Step) Heat a pan on medium flame and add butter. Add cinnamon stick and bay leaves, sauté until aromatic. Add chopped ginger and garlic, sauté lightly (do not brown). Add carrot batons, sauté for 1 minute. Add onion (big dice) and cook until slightly translucent. Add green peas and mix well. Add the chicken, season with salt and black pepper, and sauté until the chicken is sealed from all sides. Add 1 tsp coriander bpaste, sauté for 30–40 seconds to remove raw flavor. Add potato cubes and mix gently. Pour in water, bring to a boil, then cover and simmer for 20–25 minutes until chicken and potatoes are tender. Switch off the heat and add coconut milk and chopped coriander leaves. Mix gently. Toasted Bread Heat a pan and toast the bread halves with butter until golden and crisp. Rub a little extra butter on the hot toast and sprinkle black pepper. 🍽️ Serving Serve the hot, creamy chicken stew with buttered pepper toast on the side. Perfect comfort food for winter evenings.
