Spring time pasta primavera uses fresh seasonal produce(asparagus, carrots, peas, pepper and onions) to make this easy, no cream (yet creamy), healthy, weeknight Protein Packed Vegetarian dinner recipe. This light Italian pasta dish is loaded with fiber (from the veggies and chickpea pasta), protein (from the pasta and optional chicken or shrimp add in), and is loaded with vitamins and nutrients. This dish can get make in 30 minutes (even faster if you meal prep and chop your vegetables ahead of time). Customize this one pan dish with any vegetables you enjoy. And do not forget the lemon for a burst of freshness and parmesan cheese for a nutty, creamy flavor. This recipe is very versatile, completely satisfying and a simple to make. It makes a great post workout dinner, can be made in advance and a great way to get your kids to eat more vegetables! Healthy, nutritious, and quick one pan clean and delicious baked oatmeal breakfast couldn’t be easier on a busy morning.(It can even be meal prepped and reheated on busy mornings) This baked oatmeal is loaded with fiber and whole grains from the old fashioned oats and good for you ingredients including chia seeds and flax seeds for added fiber, protein and fat along with protein packed greek yogurt and natural peanut butter. Best of all, it gets mixed in the same dish you bake it in so little clean up! Customize this baked oats breakfast anyway you want changing the fruits from berries to bananas or even apples. You can use any nut butter or leave it out completely. The bananas which add sweetness can even be substituted with apple sauce or pumpkin. This recipe is very versatile, completely satisfying and a simple to make. Enjoy! Ingredients 12-16 ounces of pasta (chickpea is great to use to add protein and fiber) 1/2 red onion, sliced 1 lb asparagus, chopped in two inch pieces 1 bell pepper, slices 1 cup frozen peas 2 carrots, sliced on the diagonal 3-5 cloves of garlic (or as much as you like) 4 tbsp olive oil (separated) 1 lemon, juiced 1/2 cup parmesan (extra to top) Salt and pepper (to taste) Parsley (to top) Cook pasta according to package. Heat 2 tbsp olive oil over medium heat. Cook asparagus, carrots, peppers and onions until they begin to get tender (5-7 minutes). Add in frozen peas and garlic. Cook for another 1-2 minutes. Remove from heat and top with pasta. Add in 2 tbsp olive oil, juice of one lemon and 1/2 cup of parmesan cheese. Salt and pepper to taste. Toss through. Top with parsley and additional parmesan cheese. Enjoy!
