Egg Lababdar | Anda Lababdar | Egg Lababdar Recipe | Egg Curry Recipe | Egg Curry | Anda Curry | Egg Lababdar Curry | Egg Curry Recipe | Anda Curry Recipe | Egg Recipe | Spice Eats Egg Curry Shop CELA Brand of Kitchen Products by Spice Eats - https://amzn.to/4rx93bX Ingredients for Egg Lababdar: (Tsp-Teaspoon; Tbsp-Tablespoon) Boiled Eggs- 8-9 Tempering: Cumin seeds-3/4 tsp Green cardamom-4 Cloves-5 Cinnamon- 2 small pieces Black peppercorns-10 Mace/ Javitri-1.5 pcs Bay leaves -2 Curd/spice mix: Whisked curd/plain yogurt- 120-130 ml Turmeric powder-1/2 tsp Red Chilli powder-2 tsp Kashmiri Chilli powder-1.5 tsp Coriander powder-2 tsp Peeled and halved small garlic cloves- 2 tsp (around 10 gms) Chopped green chillies- 3 Water-2-3 tbsp Other Ingredients: Onions chopped- 2 medium (150 gms) Ginger garlic paste-1.5 tsp Salt-1/2 tsp + seasoning later -pinch Oil- 4 tbsp Dry roasted Kasuri methi- 1 tsp Coriander leaves fine chopped- 3-4 tbsp Garam Masala powder - 1/4 tsp Preparation: Boil and shell around 9 eggs. Cut the 6 boiled eggs into halves. And set aside balance 3 to be grated later. Chop the onions and set aside. For the Curd/Spice mix: Take small garlic cloves, peel and halve these .Also chop the green chillies. Whisk the curd/plain yogurt. Now add all the spice powders, garlic cloves and chopped green chillies. Also add 2-3 tbsp water. Mix it well and set aside. Process: Heat oil in a kadhai and add the whole spices. Give a stir and then add the chopped onions. Mix and fry on medium heat for around 7-8 mins. Now add the ginger garlic paste and fry on low heat for around 2 mins till raw smell is gone. Now switch off heat/lower heat and add the curd/spice mix. Mix well and stir for around 2 mins and then switch on heat on low. Mix and cook on low heat for around 3-4 mins till oil separates. Now add around 250-300 ml water and mix and simmer for 2-3 mins till oil separates. Now grate 2 boiled eggs evenly on the gravy and simmer for a minute. Arrange the egg halves side by side and give a light stir. Cover & cook on low heat for around 3 mins. Remove lid and then sprinkle garam masala and pinch of salt for seasoning. Lastly garnish with grated boiled eggs evenly and chopped coriander.
