You can use double clutching in a situation where for example have to speed up but you are still cruising in 5th/6th gear. You downshift to increase speed. If you attempt to speed up in 5th or 6th gear you will notice that the car takes forever to speed up but if you double clutch downshift to a lower gear you will be able to speed up, turning a downshift into an upshift.
