Whether you’re cooking for a family dinner or festive table, these dishes bring authentic royal flavors straight to your kitchen. ✨ Show Name: Masala Mornings 👩‍🍳 Host: Shireen Anwar 📅 On-Air Date: 24 November 2025 📡 Channel: Masala TV Experience easy techniques, perfect textures, and irresistible taste — all in one delicious double-recipe episode! 📌 RECIPE CARD MONDAY MURADABADI PULAO BIRYANI Ingredients Chicken 16 pieces 1 kg Yogurt whipped 1 cup Green chilies crushed 8 Ginger garlic paste 2 tbsp Bay leaf 1 Mace 1 Black cardamom 2 Star anise 2 Cinnamon 1 stick Black pepper 10 Cloves 8 Green cardamom 6 White cumin 1 tsp Salt 2 tsp Lemon juice 3 tbsp Coriander crushed 2 tbsp + fennel crushed 1 tbsp (Make Potli) Oil 1 cup Onion sliced 2 cups Rice 750 gm soaked for half an hour Water 4 ½ cup Thinly sliced lemon 1 Green chilies whole 8 Salt for rice as required Yellow color ¼ tsp Screw pine 1 tbsp METHOD Marinate chicken with all the ingredients given. Heat oil, add sliced onion, fry very light golden, remove half onion immediately, add marinated chicken to the remaining onion, fry till color changes, add in the potli, cover and cook till chicken tender for about 20 mins, then add water, cook till water boiling covered, remove the potli, add in the soaked rice with sliced lemon, whole green chilies, cook on high flame, lower flame, add salt as required, leave it on dum, lastly add brown onion which we removed, yellow color mixed with kewra, serve with salad and raita. VEGETABLE MALAI KOFTA Ingredients Potatoes 2 boiled, peeled and mashed Cottage cheese 200 gm mashed Corn flour 1 tbsp Flour 1 tbsp Black pepper 1 tsp Salt ½ tsp Chicken powder ½ tsp Chopped coriander leaves 2 tbsp METHOD FOR KOFTA Mix all together, shape into small balls and shallow fry. Ingredients for Gravy Oil ¼ cup Chopped onion 1 cup Ginger garlic paste 1 tbsp Tomatoes blended 2 Green chilies 4 chopped Medium potato 1 grated Almonds grounded 2 tbsp METHOD Heat oil, sauté all this, fry well, make a smooth paste of it. Ingredients for Final Gravy Oil ½ cup Whole spices mixed 1 tbsp Turmeric ½ tsp Chili powder 2 tsp Butter chicken masala 2 tbsp Chicken powder 1 tsp Salt 1 tsp Black pepper ½ tsp Kasuri fenugreek 1 tbsp Butter 2 ounce Cream ½ cup Milk ½ cup Coriander leaves 2 tbsp METHOD Mash together all the ingredients for kofta, shape into balls and shallow fry. In a wok, heat ghee, fry onion, tomato, green chilies, almond powder, potato, remove and blend to a puree.
