This is my standard #chocolatecake recipe that I normally make for cupcakes, just doubled. Heat 1 1/2 cups of milk until hot (but not boiling); pour over 1 cup unsweetened cocoa powder in a large bowl and whisk until smooth. Let cool slightly. Meanwhile, whisk 2 cup flour and 1 tsp each baking soda and salt in a bowl. Whisk 2 cups sugar, 1 1/2 cups Vegetable oil, 2 egg, and 2 tsp of vanilla into the milk and cocoa bowl until smooth. Whisk in the flour mixture until just combined. Prepare your cake pan(s) by spraying them with Pam and cut out a circular piece of parchment paper to put on the bottom. Divide the batter into 3 equal parts to fill a 6" pan about 1/3 of the way full. Bake for 35-40 minutes, until the top springs back when you touch it. Allow to cool in the pan for 5 minutes before transferring to a wire rack to allow to cool completely. Make your 2 frostings. For the chocolate buttercream pulse 1 stick of softened butter, 2 cups icing sugar, 4 ounces melted semisweet chocolate, 2 tablespoons each milk and cocoa, and 1 tsp of vanilla in a food processor until smooth. ----I heated my chocolate in the microwave with the milk for 30 seconds, covered, and allowed it to cool down some before adding it to my butter. For the Vanilla buttercream beat 3 sticks of softened butter, 6 cups of sifted icing sugar, and a pinch of salt in a mixer on medium speed until just combined. Add 4 teaspoons of vanilla and beat on medium-high speed until creamy (about 3 minutes). Beat in 2 tablespoons of milk until fluffy, about 1 more minute. ------ If you want a more Pure white frosting, use colourless vanilla.
