Badam halwa is a classic and soulful Indian sweet made during festivals.It is rich in flavour and texture as well extremely delicious. Badam halwa stands high when it is prepared using traditional method instead of using flour. The taste of this halwa melts in mouth,if it grinded to coarse and cooked in right amount of ghee and sweetener. Here, I'm presenting the keto/lowcarb version of badam halwa using traditional method of south India(Tamil Nadu style). Cooking time is bit lengthy process from 40 mins to 1 hr but the outcome is highly delicious. Mode of cooking : Gas stove Preparation time : 30 mins Cooking time : 50 mins Ingredients: Badam/almond - 100 gms Fresh cream - 40 ml Water - 40 ml Ghee - 25 ml + 25 ml Sweetener - 50 gms Salt - a pinch Saffron - to enhance color Method : 📍Soak 100 gms of badam(almonds) in hot water for 30 mins. 📍Peel the skin and grind it to coarse paste. 📍Take 40ml of fresh cream and add 40 ml of water. 📍This is our diluted milk. 📍In a heavy bottomed pan, add our diluted milk. 📍Stir and boil the milk. 📍Add our grinded coarse badam paste.. 📍Mix without lumps. 📍Stir continuously for 10 mins till the badam paste coagulate with milk and slightly thickens. 📍Add saffron and stir for 10 mins n medium high flame. 📍Add 25 gms of ghee and stir continuously for 10 mins n medium low flame. 📍Add pinch of salt and stir well. 📍Once the raw smell of badam leaves, add 50 gms of sweetener. 📍Mix well so that sweetener dissolves with badam-ghee mixture. 📍Keep stirring for 5 mins and then add another 25 gms of ghee. 📍Stir continuously for 10 mins in low flame. 📍Turn off once the halwa starts leaving the sides and glaze of the ghee is visible on top. 📍Garnish with chopped badam(almonds).
