In a large pot, heat the sunflower oil and brown the pork belly on all sides. ▪️2. Cover the pork belly with water and add the chicken carcass, spring onions, diced carrots, whole or lightly crushed garlic cloves, ginger pieces, shiitake mushrooms, soy sauce, and mirin. ▪️3. Cook over low heat for 90 minutes, skimming if necessary. ▪️4. After the time is up, remove the pork belly and set aside. ▪️5. In another pot, cook the eggs in boiling water for 6 minutes; After cooking, refresh them in ice water, peel them, and place them in a bowl. ▪️6. Add mirin and soy sauce until covered and refrigerate for 6-8 hours. ▪️7. Cook the ramen noodles according to the manufacturer's instructions. ▪️8.
