In this video I’m showing you how to make homemade butter using just cream, plus the best way to store and freeze it so it keeps beautifully. This is a simple, traditional method that anyone can do at home — no special equipment needed. I also share tips for washing the butter properly, salting it to taste, and how to freeze butter so it stays fresh for months. Homemade Butter (Small Batch) Ingredients Heavy cream (also called double cream or whipping cream) Use cream with at least 35–40% fat (600 ml heavy cream (double cream) makes about 1 cup butter) plus 300 ml buttermilk Salt (optional) Equipment Stand mixer, hand mixer, or a jar with a tight lid Fine mesh strainer or cheesecloth Bowl of ice-cold water Instructions Whip the cream Pour cream into a bowl or mixer. Beat on medium-high. First it becomes whipped cream Then grainy Finally, the butter solids separate from the liquid (buttermilk) Drain the buttermilk Pour off the liquid (save it for baking or pancakes). Wash the butter (important for storage) Place the butter into a bowl of ice-cold water. Gently press and squeeze it with a spatula or clean hands. Pour off cloudy water and repeat until the water runs clear. This step helps the butter keep longer. Salt if desired Knead in ¼–½ teaspoon fine salt per cup of butter, to taste. Shape the butter Press into a block, roll into a log, or use a butter mold. How to Wrap & Freeze Homemade Butter Homemade butter freezes very well for up to 6–9 months if wrapped properly. Best Wrapping Options (in order) 1. Parchment paper + freezer bag (best overall) Wrap butter tightly in parchment paper Place wrapped butter into a freezer-safe zip bag Press out as much air as possible 2. Wax paper + foil Wrap in wax paper Wrap again in aluminum foil for extra protection 3. Plastic wrap + freezer bag Wrap tightly in plastic wrap Place in freezer bag and remove air Tips for Freezing Butter Freeze in smaller portions (½ cup or tablespoon pats) Label with date and salted/unsalted Store away from strong-smelling foods (butter absorbs odors) Thawing Thaw in the refrigerator overnight Or grate frozen butter directly into baking recipes 🥛 Ways to Use Homemade Buttermilk Pancakes or Waffles Makes them lighter and tender. Use it in place of regular milk. Scones, Soda Bread or Biscuits Reacts with baking soda for a lovely rise and soft crumb. Quick Breads & Muffins Adds moisture without extra fat. Marinade for Chicken or Pork Gently tenderises meat before cooking. Smoothies or Oat Porridge Adds protein with a mild, fresh flavour. Salad Dressings Use as a base for creamy dressings (herb, garlic, or lemon). Drink It Chill and drink plain, or with a pinch of salt — very traditional.
