No Fry Falafel and Hummus I always felt guilty while having fried Falafel with super healthy Hummus. Not any more. This is no fry version of falafel made on appam pan. Ingredients: To make falafel 1 cup boiled chickpeas 1/2 onion finely chopped 2 cloves garlic finely chopped 2 green chillies finely chopped Coriander leaves Salt 1/2 tsp Roasted cumin seeds powder Black pepper Some lemon juice 2 to 2.5 tbs Bread crumbs (or Maida/Plain Flour) 1 to 2 tbs water Oil To make hummus 1 cup boiled chickpeas with some ginger 1.5 tbs Tahini paste (Recipe of Tahini paste is in description) 1 finely chopped green chilli 2 cloves garlic finely chopped 1 tbs curd Some chilli flakes 1/2 lemon juice 4 tbs water used for boiling chickpeas 1 tbs olive oil (or 1/2 tsp sesame oil) Salt Mix salad - olive, tomato, cucumber, coriander stems - do not add salt Roasted cumin seeds powder Chilli flakes Coriander leaves Olives Olive oil Method: Take 1 cup boiled chole (chickpeas) in a mixie Add 1/2 finely chopped onion, 2 cloves finely chopped garlic and 2 green chillies finely chopped Add salt, 1/2 tsp roasted jeera powder and some black pepper add 1/2 lemon juice, it will ensure coriander leaves stay green 2 tbs Bread crumb to be added; or you can use Maida too add 1 to 2 tbs water run mixie on pulse mode as we don’t want paste check consistentcy, if you feel sticky or watery then add 1/2 tbs bread crumbs and grind again Make small roundels to make falafel Keep falafel balls in freezer for 5-10 minutes Cook falafel in appam pan 3-4 tsp oil good enough for 12 falafel balls Keep flame at slow to medium flame Cook on all sides Falafel is ready Next hummus 1 cup boiled chickpeas with some ginger 1.5 tbs Tahini paste (Recipe is in description) Dry roast white sesame seeds and churn them in mixie, add 2 tbs curd and you will get a nice paste, it will be close to taste of Tahini paste add 1 finely chopped green chilli and 2 cloves garlic finely chopped add 1 tbs curd Some chilli flakes 1/2 lemon juice 4 tbs water used for boiling chickpeas add 1 tbs olive oil (or 1/2 tsp sesame oil) add salt Churn it in mixie and Hummus is ready Keep salad ready olive, tomato, cucumber, coriander stems Do not add salt in salad else it will get watery Serve hummus by spreading in plate Sprinkle roasted cumin seeds powder and chili flakes Spread falfel and salad Garnish with coriander leaves and olives Drizzle olove oil . .
