Navratri is here, during these nine auspicious days, we seek the blessings of Goddess Durga. Navratri fasting is our way of showing the devotion. There is also a scientific rationale behind these fasts, during transitions in seasons, body is prone to illness & infections and we should eat food which is easy to digest. All meals are prepared without onion and garlic. Instead of table salt we use with vrat salt (sendha namak), or rock salt. No grains like wheat, instead we use kuttu ka atta (buckwheat flour), singhare ka atta (water chestnut flour) etc. Instead of rice, we can have samak ke chawal (barnyard millet). Grate the potatoes. add green chilies as per taste. add fine chopped coriander leaves. add 1/2 tbsp chopped ginger. Add 1/2 tsp black pepper powder. Add sindhav salt as per taste Add 1/3 cup Rajgira flour & mix it. Grease a pan with desi ghee (unsalted butter) Add the batter in pancake shape to cook on medium flame. Cover it with a lid & cook it till it becomes golden brown on each side by flipping it. When cooked take it out in a plate & serve it with curd/chutney.
