Here is the link for the collaboration video! • Pumpkin Palooza Collaboration #PumpkinPalo... Savory Pumpkin Fritters Recipe 2 cups grated squash or pumpkin 4 slices crispy bacon, crumbled, otional 1/2 c chopped onion 1 large egg 1/4 cup flour 1/8 cup cornmeal mix 2 - 3 T unsweetened coconut milk 1/8-1/4 cup grated Parmesan cheese 1/4 tsp salt, omit or reduce if using bacon 1/8 tsp ground cayenne pepper 1/2 Tablespoon dried parsley flakes 2 Tablespoons olive oil Cook and crumble bacon. Peel and grate the pumpkin or squash. Add the squash and remaining ingredients, except the olive oil, in a bowl. Mix well. To a hot cast iron skillet, add the oil. Divide the mixture into even mounds in the bowl. When the oil is hot, add the mound 3-4 at a time into the skillet. flatten the mounds into a thin fritter. Flip when the fritter is browned on the bottom side. Remove the fritter to a lined plate to drain when both sides are browned. Serve while warm. I believe these would pair well with a sour cream based dipping sauce, or they would possibly be able to carry a light drizzle of honey and lemon. I've yet to try those options, though. 🥰
