Spicy Cuisine for FRI-YAYS* 2018 “All because we care for your good health" Baby Corn Potato Fingers * Source -SBL Kitchen by Mukta Nagaraj Ingredients: Baby corn -6nos Vinegar -1Tbl Chilli Powder -1/2tsp Pizza seasoning -1/2tsp Salt -to taste Olive oil -1TBL Ingredients: Dipping sauce: Mayonnaise -2Tbl Garlic chopped -1tsp Chopped green chilli -1/4th tsp Red Bell pepper chopped -1 Tsp Onion chopped - 1tsp Sugar powdered -1/4 Tsp Parsley chopped -1/2 Tsp Olive Oil -1/2 Tsp Ingredients: Coating: Mashed potato -1cup Corn flour -1tbl Coriander -1Tbl Ginger & Chilli paste- 1 tsp Black Pepper - to taste Salt - to taste Breadcrumb - 1 cup Method: Blanch and slit the baby corn into 2, marinate the baby corn with pasta seasoning, salt, chilli powder, vinegar and Olive oil. Sautee the baby corn until its dry keep it aside to get cool. For dipping sauce mix all the ingredients with the mayo in a mixing bowl. Mix well and refrigerate. In a mixing bowl take mash potato, corn flour, chopped coriander, ginger and chilli paste, Crushed black pepper and salt. Make long finger-shaped potato mixture and place the sautéed baby corn inside wrap properly with potato mixture(dough). Repeat until all the baby corn is coated with potato and then rolled in breadcrumbs. Heat the oil and deep fry the baby corn & potato fingers until golden brown and serve with the dip.
