Yam Rice | Taro Rice | 芋头饭 Ingredients: 400-500g Yam / Taro (cut into cubes) 3.5 cups Thai fragrant rice / jasmine rice (wash and drain) 2 tbsp Dried shrimp (soak in water for 10mins, remove water) 1 tbsp Shredded dried squid (soak in water for 10mins, remove water) 2-3 Dried shitake mushroom (soak in water for 10mins, keep the water to cook rice) 1 Dried chinese sausage (soak in water for 10mins, remove water, remove casing, cut into pieces) 2 tbsp Minced garlic 4 Sliced shallot 200g sliced pork belly A. Pork belly marinate: 1 tsp light soy sauce 1 tsp oyster sauce 1/3 tsp white pepper 1 tsp cooking oil 1.5 tsp tapioca starch B. Fry yam and ingredients: Fry shallots and set aside Use shallot oil, fry pig skin / fat. Remove pork lard Use same oil, fry dried shrimp, mushroom, marinated pork belly, dried chinese sausage, shredded dried squid, 1 tbsp minced garlic 1 tsp white pepper, 1.5 tbsp light soy sauce, 1 tbsp dark soy sauce, 1/2 tsp salt, 1 tsp sugar Set ingredients aside C. Fry uncooked rice: 1 tbsp garlic 3.5 cups rice 1 tbsp dark soy sauce Fried shallot D. Cook yam / taro rice in rice cooker: Add B + C into rice cooker Add mushroom water + water (3.5 cups rice to 4 cups water) Garnish rice with fried shallots, spring onions.
