Dear subscriber. We have come to the last coffees of the year. To finish 2020 we have chosen two coffees from South America. Cerrado is a savannah that stretches from Brazil to Paraguay and Bolivia. The coffee farm, Daterra is located in the Brazilian part of Cerrado and is founded by Luis N. Pascoal. As you open this bag of coffee, you can immediately smell how intense and fruity it is. This comes from the processing which is an Anaerobic Fermentation. This enhances the fruity aromas in the bean and leaves us with a marriage between the typical roasted nuttiness and molasses with dried, tropical fruits and a clear fine liqueur feel to it. Travelling from Brazil to Colombia, the second coffee is by Duver Rojas and his two brothers. They primarily work with Caturra, Typica and Colombia varieties. It is clear they have a great understanding of the craft and are motivated to keep developing their product. This coffee is washed which gives us a balanced and sweet cup with a smooth body and delicate acidity. We get floral notes, roasted hazelnuts, and pear.
