Slow Cooker Loaded Potato Soup 3 1/2 lbs Russet Potatoes - Peeled & Cubed 1 1/2 C Onion - Chopped 4 - 5 Cloves Garlic - Minced 1 lb Bacon - Cooked & Chopped (Reserve 3 Slices for Garnish) 1 Tbsp Parsley 1/2 tsp Black Pepper 32 oz Chicken Stock or Broth 1/2 C Sour Cream 2 C Cheddar Cheese 4 Tbsp Butter 1/3 C Flour 1 Pt Heavy Cream Chives Add potatoes, onion, garlic, bacon, parsley, black pepper & chicken stock to slow cooker. Cook on high 2 - 2 1/2 hrs or until potatoes are fork tender. Once potatoes are cooked we will need to make the Bechamel Sauce Melt 4 Tbsp butter in saucepan, add flour and cook or 1-2 mins. Add heavy cream and stir constantly until sauce thickens up, usually takes 5-6 min or so. Add sauce to slow cooker and start to mash the potatoes to the consistency you like.
