INGREDIENTS • 2 Eggs (Whisked) • ¼ cup Shallot • 2 stalks Green Onion (Chopped) • ¼ cup Carrot (Finely diced) • 1 cup Cooked Quinoa • 1 tbsp Light Soy Sauce • 1 tsp Chili Bean Paste or Chili Sauce (Optional) • ½ tsp Sesame Seed Oil • ¼ cup Green Peas • Salt & White Pepper (to taste) • 3 tbsp Cooking Oil INSTRUCTIONS • Cook your eggs: In a wok over medium-high heat with a little oil, scramble the eggs until they're cooked through. Then, take them out of the wok and put them aside for now. • Start the aromatic base: Using the same wok, pour in 2 tbsp of cooking oil. Add the shallots and the white parts of the green onions, and stir-fry them for about a minute. • Add the carrots: Toss in the chopped carrots and continue stirring for another two minutes, allowing them to soften slightly. • Combine the main ingredients: Now, add the cooked quinoa, light soy sauce, sesame seed oil, and chili bean paste (or your preferred chili sauce).
