The Kashmiri Radish Walnut chutney is truly a hidden gem in Indian food. This is a yummy way to include walnuts into your diet. Walnuts are an essential part of Kashmiri cuisine. Radish, mint, and walnut are such a unique combination of ingredients that adds interesting flavors and textures. Lemon juice is not traditionally added to this chutney. You could leave it out if you please. Try this with naan, pita, chips, or apple slices. Without further ado, let's take a look at the recipe! Ingredients: (serves 6-8) 7-8 Stir-fried Green Chilies 15-20 Mint leaves 3 cups grated Radish ½ cup coarse paste of walnuts soaked in hot water for 20 mins 2 cups hung yogurt/curd 1 teaspoon Cumin powder Salt to taste ½ cup coarsely pulsed Walnuts Water up to 1 cup to adjust consistency Method: 1. Soak half cup walnuts for 20 minutes in hot water. Make a coarse paste of this. Take another half cup of walnuts and make a coarse dry powder of them. 3. Grate the radish and add a pinch of salt. Let it sit for 20 minutes. Now squeeze out the water. 3. Stir fry green chilies in some oil. You could use mustard oil for this process. 4. Use a mortar and pestle to mash mint leaves and green chilies. 5. Add the grated radish, walnut paste and powder, mashed mint leaves and green chilies, cumin powder, greek yogurt/ hung curd, salt to taste, lemon juice and mix well. Add some milk or water to adjust consistency. 6. Your dip is now ready!
