Ingredients: 1 Duck Breast 2 1/2 tortillas 1 tablespoon butter 1/2 cup Smoked Gouda shredded Salt and peeper Directions: 1. Heat a medium skillet season Duck Breast with salt and pepper 2. Place duck skin side down and sear for a few minutes do not burn, lower heat a little turn over and cook a few minutes on other side till Medium temp.. Meat will still be pink this is ok more then ok 3. Remove Duck breast and slice fairly thin 4. Place 1/2 of butter in same skillet add Tortilla and start cooking at Medium heat add shredded cheese to coat entire tortilla . 5. Places slices of duck over Cheese, you can add more cheese if you like 6. Place 2nd tortilla over top. 7. Once bottom tortilla is golden brown flip over to toast other side. 8. Add remaining butter to pan. once both sides are crisp slice into 8 pieces and serve right away, while cheese is still gooey.
