A 'cheese' is a cider making term. It refers to the chopped up apples that are wrapped in cloth to be pressed for the juice that will then be fermented. This timelapse video was shot in the pressing shed of Little Pomona Cidery & Orchard, Herefordshire. It took Jane Peyton (drinks writer and educator) about 30 minutes for 9 'cheeses' to be assembled for pressing. http://www.jane-peyton.com http://www.littlepomona.com/
